Brookies Cookies with Brownie Mix Recipe

Ingredients
  

For the Brownie Layer

  • 1 Box Brownie mix
  • ½ cup Unsalted butter, melted
  • 2 large Eggs

For the Cookie Layer

  • 1 cup All-purpose flour
  • ½ tsp. Baking powder
  • ¼ tsp. Baking soda
  • ¼ tsp Salt
  • ½ cup Unsalted butter, softened
  • ½ cup Granulated sugar
  • ½ cup Light brown sugar
  • 1 large Egg
  • 1 tsp. Vanilla extract
  • 1 cup Chocolate chips (or a mix of chocolate chips and chunks)

Instructions
 

  • The oven should be preheated to 350°F (175°C). Use parchment paper to line or grease a 9x9-inch baking pan, leaving some overhang for easy removal.
  • To make the brownie layer, combine the melted butter, brownie mix, and eggs in a large mixing bowl. Blend until smooth and well combined.
  • To make the cookie layer, whisk together the flour, baking powder, baking soda, and salt.
  • Cream the softened butter, granulated sugar, and brown sugar together until light and fluffy in another bowl.
  • Add the egg and vanilla extract and beat until well combined. Mix the wet and dry ingredients until just combined.
  • Incorporate the chocolate chips or chunks evenly throughout the cookie dough.
  • In the prepared baking pan, spread the brownie batter evenly. Place spoonfuls of cookie dough on top of the brownie layer. The cookie dough should be spread evenly over the brownie batter using a spatula or a spoon.
  • Place rounded tablespoons of dough on prepared baking sheets using a spoon. Make sure there is enough space between each Brookies so that they can spread.
  • In the preheated oven, bake for 25-30 minutes or until a toothpick inserted in the center comes out moist.
  • On a wire rack, let the Brookies cool completely.
  • To remove the Brookies from the pan, use the parchment paper overhang. Cut them into squares on a cutting board.
