Ingredients
  

  • 1 cup unsalted butter
  • 1 cup pumpkin puree
  • 1 cup granulated sugar
  • 1 cup brown sugar (for that rich flavor)
  • 2 large eggs
  • 1 tsp. pure vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp. baking soda
  • ½ tsp. baking powder
  • ½ tsp. salt
  • 1-1/2 tsp. ground cinnamon
  • ½ tsp. ground nutmeg
  • ½ tsp. ground cloves
  • 3 cups old-fashioned rolled oats
  • 1 cup chocolate chips

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Melt the unsalted butter over medium heat. When the butter is melted, continue cooking until it turns golden brown, releasing a nutty aroma.
  • To prevent burning, swirl the pan frequently. Let the cooled browned butter cool in a bowl.
  • Combine the canned pumpkin puree and both sugars in a separate bowl.
  • Mix well, then add the browned butter, eggs, and vanilla extract. Mix until smooth and velvety.
  • Combine the flour, baking soda, baking powder, salt, and spices (cinnamon, nutmeg, and cloves) in another bowl.
  • Mix this dry mixture into your wet ingredients until just combined. If you're using chocolate chips and rolled oats, fold them in last.
  • Oats should be generously sprinkled throughout the dough.
  • In a pre heated oven line your baking sheets with parchment paper.
  • Place rounded tablespoons of dough on the sheets, leaving plenty of room for the cookies to spread.
  • Bake for 12-15 minutes, or until golden brown around the edges. The cookies will still be soft in the center as they cool, but they will firm up as they cool.
  • Let them cool on the baking sheets for a few minutes before transferring them to wire racks.
