- 1 head lettuce or iceberg (washed and chopped)
- 1 cup cherry tomato
- ½ cup black beans
- ½ cup corn kernels (canned or cooked)
- ¼ cup red onion
- ¼ cup sliced black olives
- ¼ cup shredded cheddar cheese
- ½ cup bell pepper (red, green, yellow, orange)
- ½ cup tortilla strips (store-bought or homemade)
- ¼ cup Fresh cilantro or parsley
Ingredients for Dressing:
- ¼ cup ranch dressing
- 3 tbsp. salsa (choose your preferred level of spiciness)
- 2 tbsp. lime juice
- 2 tbsp. olive oil
- Salt and pepper to taste
Add lettuce, cherry tomatoes, corn kernels, black beans, red onion, black olives, bell pepper, shredded cheddar cheese, tortilla strips, and cilantro to a large bowl.
Mix ranch dressing, salt, black pepper, olive oil, lemon juice, and salsa together in a small bowl. It is up to you how much salsa you want to add.
Toss gently the salad mixture with the dressing to coat all the ingredients evenly. Let it chill for 10 minutes.
