Our much-loved Sesame Street monster is now a frozen treat with Cookie Monster Ice Cream. This fun dessert is a vibrant celebration of everything we love about cookies, transformed into a creamy, dreamy creation. The blue color and candy-like eyes make it visually appealing as well as savory.

For the Ice Cream Base:
- 2 cups heavy cream
- 1 cup whole milk
- ¾ cup granulated sugar
- 2 tsp. pure vanilla extract
For the Cookie Dough Chunks
- ½ cup unsalted butter (softened)
- ½ cup brown sugar
- ¼ cup granulated sugar
- 1 cup all-purpose flour
- ½ tsp. salt
- ¼ cup milk
- ½ cup mini chocolate chips
For the Cookie Monster Transformation:
- Blue food coloring
- Chocolate chip cookies
- Candy googly eyes
- Oreo cookies
Preparing the Ice Cream Base
The heavy cream and sugar should be whisked together until the sugar is fully dissolved.
Add pure vanilla extract to the whole milk. Combine everything well by stirring.
Refrigerate the mixture for at least 2 hours or until it is thoroughly chilled.
For Cookie Dough Chunks
Combine the softened butter, brown sugar, and granulated sugar in a separate bowl.
In another bowl, whisk the all-purpose flour and salt together. The butter and sugar should be creamed slowly after adding the dry mixture.
Pour in the milk and gently fold in the mini chocolate chips to create the cookie dough. Ensure it's evenly mixed.
Roll the cookie dough into small chunks and place them on a baking sheet. Once the chunks are frozen, let them rest for a while.
Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown. As the cookies cool, they will continue to set.
Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Assembling Cookie Monster Ice Cream
The chilled ice cream base should be removed from the refrigerator and blue food coloring added until the desired hue is achieved.
Take out your frozen cookie dough chunks and break them into smaller pieces. These will be the "cookie" bits in our Cookie Monster ice cream.
Layer the blue ice cream with the cookie dough chunks and the crumbled chocolate chip cookies in your ice cream container. Don't forget to stick the googly eyes on the top!
Freezing and Serving
After assembling the Cookie Monster Ice Cream, place it in the freezer for at least 4 hours.
