Ingredients

  • 1  (12-14 pound)  turkey
  • Salt and pepper
  • ¼ cup melted butter
  • 1 tbsp. olive oil
  • 4 fresh bay leaves
  • 2  garlic cloves
  • 1  onion, quartered
  • 2 carrots
  • 2  lemons
  • Fresh herbs ( thyme, and parsley)

Instructions

  • The barbecue should be prepared for roasting (indirect method) at approximately 350 degrees.
  • Season the butter with salt and pepper in a big bowl. Mix the olive oil, lemon zest, juice, crushed garlic, and parsley together.
  • Gently loosen both ends of the breast skin (be careful not to tear it). From the lower side of the breast, work your way under the skin of the legs to loosen the gap.
  • Spread half of the butter mix under the skin and massage it around the breasts and down over the legs so that the meat is evenly covered with butter.
  • The bay leaves should be inserted under the breast skin at the end.
  • Put the vegetables, lemon slices, parsley, and thyme in a roasting pan. The breast side of the bird should be on top.
  • Put the remaining butter on the outside of the skin. Drizzle with olive oil and season well.
  • For 10–15 minutes, roast the turkey on the barbecue. Once the breast has been basted, place the bacon over it. Close the lid of the barbecue and roast again.
  • Allow to cook for about two and a half hours (or 30 minutes per kilogram) basting occasionally.
  • Before removing the meat from the barbecue, check the juices are clear or the internal temperature is over 75°C.
  • Rest for at least 45 minutes. Make sure the bay leaves are removed from under the skin before serving. Gravy can be made with vegetable juices and pan juices.
  • Enjoy!  Tender And Juicy Grilled BBQ Turkey
