Italian Rice Pie Recipe

The Italian rice pie, also known as "Torta di Riso" in Italian, is one of the most popular desserts in the country. Traditionally, rice cultivation has played a significant role in the culinary landscape of southern Italy, where this traditional treat originates.

Ingredients
  

For the Pie Crust:

  • 1-1/2 Cup All-purpose flour
  • ½ Tsp. Salt
  • ½ Cup Cold unsalted butter, cubed
  • 4-6 Tbsp. Ice water

For the Filling:

  • 1 Cup Arborio rice
  • 2 Cups Whole milk
  • Cup Granulated sugar
  • 1 Tsp. Vanilla extract
  • Zest of 1 lemon
  • 3 Large Eggs, beaten
  • 1 Cup Ricotta cheese
  • ½ Cup Candied fruits or raisins (optional)

Instructions
 

Prepare the Pie Crust:

  • Combine the flour and salt in a large mixing bowl.
  • Cut the cubed butter into the flour with a pastry cutter or fork until it resembles coarse crumbs.
  • Mix in the ice water one tablespoon at a time until the dough comes together.
  • Wrap the dough in plastic wrap and refrigerate for 30 minutes.

Preheat the Oven:

  • Preheat your oven to 375°F (190°C).

Cook the Rice:

  • Over medium heat, simmer the milk in a medium saucepan.
  • Reduce the heat to low and stir in the Arborio rice.
  • For about 20-25 minutes, cook the rice, stirring occasionally, until it absorbs most of the milk and becomes creamy.
  • Allow it to cool slightly after being removed from the heat.

Prepare the Filling:

  • Combine the cooked rice, granulated sugar, vanilla extract, lemon zest, beaten eggs, and ricotta cheese in a large mixing bowl.
  • Combine well.
  • Add candied fruits or raisins, if using.

Roll Out the Pie Crust:

  • Roll the chilled pie dough into a circle large enough to fit into a 9-inch pie dish on a lightly floured surface.
  • The rolled-out pie dough should be carefully transferred to the pie dish and any excess dough should be trimmed off.

Assemble the Pie:

  • Fill the pie crust evenly with the prepared filling.
  • Use a spatula to smooth the top.

Bake the Pie:

  • Bake the pie in the preheated oven for 40-45 minutes, or until the filling is set and the crust is golden brown.

Cool and Serve:

  • Let the pie cool completely on a wire rack after removing it from the oven.
  • After the Italian Rice Pie has cooled, slice it into wedges and serve at room temperature or chilled.

Optional Garnish:

  • To make the pie even sweeter, dust it with powdered sugar before serving.
