- 1 ciabatta roll or focaccia bread
- 1 roasted red pepper, sliced
- 1 red onion
- ΒΌ cup olives, pitted and sliced
- 1 handful Spinach leaves
- 2 tbsp. hummus
- 2 tbsp. Feta cheese, crumbled
- 2 tbsp. olive oil
Make sure your grill pan or panini press is preheated.
The ciabatta roll or focaccia bread should be cut in half horizontally.
Brush some olive oil on the cut sides of the bread and spread hummus.
Place roasted red peppers, olives, onion, spinach leaves, and crumbled feta cheese on one side of the bread.
Gently press the sandwich together with the other half of the bread.
