Ingredients
  

  • 1 ciabatta roll or focaccia bread
  • 1 roasted red pepper, sliced
  • 1 red onion
  • ΒΌ cup olives, pitted and sliced
  • 1 handful Spinach leaves
  • 2 tbsp. hummus
  • 2 tbsp. Feta cheese, crumbled
  • 2 tbsp. olive oil

Instructions
 

  • Make sure your grill pan or panini press is preheated.
  • The ciabatta roll or focaccia bread should be cut in half horizontally.
  • Brush some olive oil on the cut sides of the bread and spread hummus.
  • Place roasted red peppers, olives, onion, spinach leaves, and crumbled feta cheese on one side of the bread.
  • Gently press the sandwich together with the other half of the bread.
  • Using a panini press or grill pan, toast the bread and melt the cheese.
  • Serve the panini warm after removing it from the heat.
