Preheat your grill to medium-high heat.
Combine soy sauce, lime juice, olive oil, minced garlic, brown sugar, cumin, chili powder, smoked paprika, black pepper, salt, and cayenne pepper in a bowl.
Mix all the ingredients well.
Transfer the marinade to a glass container with a lid and place the skirt steak in it.
Make sure the steak is fully coated in the marinade by covering the container.
It's better to marinate skirt steak overnight, or at least for 2 hours.
Drain off any excess marinade from the skirt steak.
Grill the steak for approximately 4-6 minutes per side, or until it reaches your liking.
Steaks should be cooked to 130°F (55°C) for medium-rare.
Let the skirt steak rest for a few minutes after grilling.
Grill tortillas to make them easy to fold and get grill marks.
Slice the skirt steak into thin strips.
Place a generous amount of skirt steak slices on each tortilla.
Add your favorite taco toppings, such as onions, jalapeños, chopped cilantro, salsa, guacamole, and lime juice, to the steak.
