Spicy Mediterranean Chicken Marinade Recipe:

A Spicy Mediterranean Chicken Marinade enhances the taste, tenderness, and juiciness of meat, poultry, or vegetables with flavorful liquids or mixtures. You can also use this on fish and turkey! I served this with mashed potatoes and boiled rice, and some of the marinade was used as a sauce. YUMMY!!!

Ingredients
  

  • 4 chicken thighs
  • ΒΌ cup olive oil
  • 2 tbsp. lemon juice
  • 2 cloves garlic, minced
  • 1 tsp. smoked paprika
  • 1 tbsp. dried oregano
  • 1 tbsp. fresh parsley
  • 1 tbsp. dried thyme
  • 1 tbsp. red chili flakes
  • 1 tsp. salt
  • 1 tsp. freshly ground black pepper

Instructions
 

  • For a Mediterranean chicken recipe grilled, preheat your grill to medium-high heat.
  • Mix the olive oil, lemon juice, minced garlic, dried oregano, dried thyme, fresh parsley, paprika, red chili flakes, salt, and pepper together in a bowl.
  • Spread the marinade evenly over the chicken pieces in a resealable plastic bag or shallow dish. If you're using a bag, be sure to seal it tightly.
  • Marinate the chicken overnight, or at least for 2 hours.
  • Once the chicken has been marinated, allow any excess marinade to drip off.
  • Place the chicken thighs on the grill and close the lid after removing them from the marinade
  • Each side should be cooked for 6-8 minutes. To keep the chicken juicy, only flip it once.
  • Rest the chicken for a few minutes before serving to allow the juices to redistribute.
  • Garnish with lemon and fresh parsley and serve.
