- 4 chicken thighs
- ΒΌ cup olive oil
- 2 tbsp. lemon juice
- 2 cloves garlic, minced
- 1 tsp. smoked paprika
- 1 tbsp. dried oregano
- 1 tbsp. fresh parsley
- 1 tbsp. dried thyme
- 1 tbsp. red chili flakes
- 1 tsp. salt
- 1 tsp. freshly ground black pepper
For a Mediterranean chicken recipe grilled, preheat your grill to medium-high heat.
Mix the olive oil, lemon juice, minced garlic, dried oregano, dried thyme, fresh parsley, paprika, red chili flakes, salt, and pepper together in a bowl.
Spread the marinade evenly over the chicken pieces in a resealable plastic bag or shallow dish. If you're using a bag, be sure to seal it tightly.
Marinate the chicken overnight, or at least for 2 hours.
Once the chicken has been marinated, allow any excess marinade to drip off.
Place the chicken thighs on the grill and close the lid after removing them from the marinade
Each side should be cooked for 6-8 minutes. To keep the chicken juicy, only flip it once.
Rest the chicken for a few minutes before serving to allow the juices to redistribute.
Garnish with lemon and fresh parsley and serve.
