Ingredients
  

  • 2 cups firm tofu (cubes)
  • 2 tbsp. olive oil
  • 1 tsp. chili powder
  • 1 tsp. smoked paprika
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. salt and pepper
  • 1 tsp. cumin powder
  • 1 tbsp. siracha sauce

Ingredients for burrito bowl:

  • cooked rice (brown or white)
  • 1 can black beans
  • 1 avocado
  • 1 red bell pepper
  • 1 orange/red bell pepper
  • ¼ cup cherry tomatoes
  • lettuce
  • 2 tbsp. jalapenos
  • ¼ cup corn
  • ½ cup tahini sauce (optional)
  • 3 tbsp. lime juice
  • Fresh cilantro

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Combine olive oil, chili powder, cumin, paprika, siracha sauce, garlic powder, onion powder, and salt in a bowl.
  • Press the tofu gently to remove excess moisture.
  • Make sure the tofu cubes are evenly coated with the spice mixture.
  • On a lined baking sheet, place the tofu and bake 25-30 minutes, flipping halfway through.
  • Set aside the tofu after removing it from the oven.
  • Make a base of cooked rice in a bowl. Mix well the rice with lime juice, black pepper, and fresh cilantro.
  • Make a generous topping of spicy baked tofu.
  • Add black beans, corn, and bell peppers to add texture and flavor.
  • In the bowl, add sliced avocado, halved cherry tomatoes, lettuce, and jalapenos to enhance the freshness.
  • Drizzle lime juice over the bowl again.
  • Garnish with fresh cilantro tahini sauce, if desired.
